You will be able to taste our products in our very short supply chain lunches or in tastings and you will be able to learn all the secrets of ancient grains in the kitchen by taking part in our cooking class!</p>



<p>Before being master pasta makers and millers, we are farmers, and this is precisely what makes the difference because we take care of the entire production cycle of cereals, from the fields to the table.</p>



<p>Come and discover with your own eyes how the products are made by taking part in our guided tours of the new production plant in Podere Lamone or the fresh pasta laboratory at Castello di Spedaletto. You will be able to taste our products in our very short supply chain lunches and you will be able to learn all the secrets of ancient grains in the kitchen by taking part in our cooking class!</p>



<p>This experience will lead you on a journey from the grain of wheat to the table, passing through the kitchen. The experience begins with a welcome aperitif with our ancient grain beer and focaccia, where you will discover how focaccia is prepared with ancient<br>grains. The experience continues with a guided tour of the castle mill.</p>



<p>During the visit you will discover with your own eyes how our ancient grains are transformed into pasta, witnessing the stone grinding and bronze drawing. An experience that will show you the world of cereals, flour and pasta as you have never seen it. With the freshly stone-ground flour we will move to the restaurant kitchen, adjacent to the mill, where you will take part in the cooking lesson.<br>During the cooking lesson you will learn to prepare the classic pici with garlic sauce, the bread soup and the traditional cantucci. At the end of the cooking lesson you can sit comfortably at the table to taste the fruit of your labor and enjoy a delicious four-course lunch.</p>

<p>Come and discover with your own eyes how the products are made by taking part in our guided tours of the new production plant at Podere Lamone or the fresh pasta laboratory at Castello di Spedaletto.</p>



<p>You will be able to taste our products in our very short supply chain lunches or in tastings and you will be able to learn all the secrets of ancient grains in the kitchen by taking part in our cooking class!</p>



<p>Before being master pasta makers and millers, we are farmers, and this is precisely what makes the difference. We take care of the entire cereal production cycle, from the fields to the table. Our history has its roots in the sharecropping tradition and the passion and love for the land has been handed down from father to son for generations, in fact the mill today stands in the building that once housed the agricultural tool shed of the sharecropper grandparents, so like our farmhouses, they are located in farmhouse buildings that once housed granaries, stables and homes, renovated according to the tradition of the Sienese countryside.</p>



<p>The fresh pasta laboratory is located at Spedaletto Castle, an ancient grange which in the Middle Ages preserved the wheat produced in Val d&#8217;Orcia and offered hospitality to pilgrims traveling along the Via Francigena.</p>



<p>During the guided tour of the mill you will discover with your own eyes how our ancient grains are transformed into pasta, witnessing the stone grinding and bronze drawing. An experience that will show you the world of cereals, flour and pasta as you have never seen it.<br>To conclude the visit, all you have to do is taste! You can enjoy a very short supply chain lunch at our restaurant right next to the castle mill.</p>

Come and discover with your own eyes how our products are made by taking part in our guided tours of the new production plant at Podere Lamone or at the fresh pasta laboratory at Castello di Spedaletto.   You will taste our products in our very short chain lunches and you will learn all the secrets of ancient grains in the kitchen by participating in our cooking class!</p>



<p>The new production plant is located 2km from Monticchiello, is surrounded by our fields and overlooks the Val d&#8217;Orcia with a splendid view of Pienza.<br>After a brief introduction on Ancient Grains we will begin the journey from the first phase of processing: sifting, the cleaning process of the cereals that is carried out before grinding. The visit continues through the storage area up to the mill with millstones, where you will assist in the grinding and discover the differences between the various types of flour. This leads us to the last phase of the cycle, in<br>the pasta factory where we produce our bronze-drawn pasta from ancient grains<br>and slowly dried at low temperature.<br>To conclude the visit, all you have to do is taste! You can enjoy a very short supply chain lunch at our restaurant in the charming Spedaletto Castle, about 6 km from the pasta factory.</p>
